Red cabbage, minced meat and potato pan with cheese

Ingredients for 2 servings:

  • 1 onion(s), red
  • 400 g ground beef (reduced fat)
  • 400 g red cabbage, frozen
  • 1 tbsp jam, red
  • 1 pinch(s) cinnamon powder
  • 1 kg potatoes
  • 150 g gratin cheese (16% fat)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Dice the onion and fry with the ground beef until crumbly. Season to taste, then remove from the pan. Add the red cabbage with jam (I had homemade plum chutney) and cinnamon powder to the pan and simmer for a good 10 minutes. Add the ground beef and mix everything well, seasoning with salt and pepper if desired. Peel the potatoes, cut into 2 x 2 cm cubes, and boil in salted water until tender. Drain the water and add the potato cubes to the red cabbage and ground beef. Sprinkle with grated cheese, cover, and heat over low heat for 5 minutes until the cheese melts.
