Red cabbage seasoned Indian style

Ingredients for 4 servings:

  • 1 kg red cabbage
  • 8 cloves
  • 8 cardamom pods
  • 2 tsp mustard seeds
  • 2 tsp fenugreek seeds
  • 2 tsp cayenne pepper
  • 1 tsp cinnamon
  • 1 tsp anise
  • 2 bay leaves
  • 30 g ghee or butter
  • 25 g ginger root
  • 1 tbsp sugar
  • 2 apples
  • 4 tbsp red wine vinegar
  • 250 ml red wine
  • 250 ml water
  • Salt

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 40 minutes; Total time approx. 3 hours

Finely chop or grate the red cabbage. Combine red wine vinegar, mustard seeds, fenugreek seeds, cumin, cinnamon, anise, and cayenne pepper to make a marinade. Mix with the red cabbage and let it simmer, covered, for at least 2 hours. Heat butter or ghee in a saucepan, add sugar, and let it caramelize slightly. Add the red cabbage, coarsely grated apples, finely chopped ginger, and bay leaves, season with salt, and pour in the red wine and water. Cook over medium heat for about 40 minutes. Finally, season to taste with vinegar and/or red wine, if desired.
