Red cabbage with cinnamon and plum jam

Ingredients for 8 servings:

  • 1 red cabbage
  • 3 onions
  • 3 apples (I use Elstar)
  • 3 tbsp sunflower oil
  • 2 tbsp balsamic vinegar
  • 2 stalk(s) cinnamon, (alternatively 1-2 tsp cinnamon powder)
  • 3 juniper berries
  • 1 bay leaf
  • 500 ml water
  • 1 tsp salt
  • 200 g plum jam, more if needed

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 2 hours 10 minutes

especially delicious with Christmas goose

First, remove the outer leaves from the red cabbage. Halve the red cabbage, remove the stalk, and finely slice the red cabbage. Peel and halve the onions, then finely slice them. Heat the oil in a large (5-liter) saucepan and sauté the onions until translucent. Add the red cabbage strips and stir. Stir in the vinegar, then deglaze with the water. Add the spices and plum jam. Reduce the heat slightly (level 1 is sufficient) and simmer for a while. Peel and core the apples, and dice them. Stir the red cabbage well and place the sliced ​​apples on top. Stir in after about 30 minutes. Simmer for about another hour, stirring occasionally. Finally, season with salt and plum jam. Tip: This also freezes very well.
