Asian pork belly

Cut the meat into cubes so that each piece has 2 cm² of rind. Chop the onions and ginger. Rub the meat with salt and soy sauce and place it in the roasting pan, rind-side down. Add the sherry and 6 tablespoons of water. Sprinkle the onions and ginger over the meat. Bring the meat to a boil, then simmer over low heat for about 2 hours, turning occasionally and adding the sugar. Serve with rice. Roasted pork is extremely delicious but also extremely fatty.
