Rice mixed with minced meat and vegetables

Ingredients for 4 servings:

  • 150 g basmati
  • 1 tsp oil for frying
  • 500 g minced beef or beef tartar
  • 1 pack of tomatoes, pureed
  • 1 zucchini
  • 1 bell pepper(s), red
  • 1 can of corn
  • 1 tsp sambal oelek
  • salt and pepper
  • Garlic
  • basil
  • oregano

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the rice in salted water. Fry the minced meat in hot oil in a large pot. Wash the zucchini, slice it, and add it to the pot. Fry briefly, then put the lid on the pot. Wash the bell peppers, dice them, and add them to the pot. Fry briefly. Add the pureed tomatoes and 1-2 teaspoons of sambal oelek, depending on your preference. Season to taste with salt, pepper, garlic seasoning, basil, and oregano (always add the sambal oelek first, then the other spices, as sambal oelek is often quite salty). Add the corn and let everything simmer for a while in a covered pot. Stir frequently to prevent burning. If using fresh herbs, add them last. Finally, add the rice and mix everything thoroughly. It also tastes great reheated the next day. Tip: We sometimes add a can of kidney beans.
