Red fried egg with peppers

Ingredients for 1 servings:

  • 1 m.-sized egg(s)
  • 25 g bell pepper(s), red
  • n. B. salt and pepper, black
  • 1 tsp. curry paste, red
  • some fat for frying
  • some chili flakes, optional

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 18 minutes

Separate the egg and let the yolk slide into a cup or small bowl; it should remain whole. Place the egg white in a mixing bowl. Deseed and finely chop the bell pepper, then add it to the egg white along with the curry paste. Blend everything with a hand blender until a red mixture forms. Season with salt and pepper or your choice of spices. Heat the oil in a small pan and pour in the colored egg white. Fry over medium heat. When the egg white begins to set, carefully place the yolk from the cup onto the mixture and continue frying until the desired consistency is reached. Arrange on a plate, garnish, and serve. If you like, you can sprinkle some chili flakes over the yolk.
