Ingredients for 6 servings:

  • 6 herring fillets or matjes fillets (refrigerated section)
  • 2 apples
  • 6 eggs, hard boiled
  • 500 g beetroot, cooked
  • 2 small onions
  • some gherkins, sweet and sour pickled
  • 1 cup sour cream
  • 1 cup sour cream
  • 1 cup of natural yogurt (small cup, approx. 150 g)
  • Milk
  • Sugar

Working time approx. 45 minutes; Total time approx. 45 minutes

to Grandma Lenchen

Hard-boil the eggs. Let them cool, then peel and dice them. Peel the apples, remove the cores, and then dice them. Dice the beets. Peel and dice the onions. Dice the gherkins. Dab any oil from the fish fillets and cut them into cubes. Combine all ingredients in a bowl and mix. Add the sour cream, sour cream, and natural yogurt and stir in. If the dressing is too thick, add a little milk and stir in. Season to taste with sugar. Serve with boiled potatoes or simply with buttered bread. We traditionally have this herring salad at Christmas and New Year’s Eve. Tip: In the fruit and vegetable aisle in the supermarket, you can usually find 500g packages of boiled and vacuum-packed cooked beets. Otherwise, cook, peel, and dice fresh beets.
