Ingredients for 1 servings:

  • 500 g pasta
  • 100g chorizo
  • 1 jar pesto, red (Pesto Calabrese)
  • 100 g crème fraîche
  • 150 g cherry tomatoes
  • 150 g tomatoes, dried in oil
  • 1 bell pepper(s), red
  • 1 bunch of spring onions
  • 50 g Parmesan, freshly grated
  • Salt and pepper, freshly ground

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

Cook the pasta al dente according to the package instructions. Finely chop the chorizo, bell peppers, tomatoes, sun-dried tomatoes, and spring onions and place them in a salad bowl. Mix the pesto and crème fraîche together and season with salt and pepper. Pour the dressing over the cooled pasta and toss to combine. Add the chopped ingredients and mix well. Sprinkle the Parmesan flakes over the salad and serve.
