Red Velvet Brownie Cheesecake

Ingredients for 12 servings:

  • 80 g flour
  • 15 g baking cocoa
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 115 g butter
  • 250 g chocolate, dark
  • 100 g white sugar
  • 50 g brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tsp food coloring
  • 350 g cream cheese
  • 200 g sour cream
  • 100 ml whipped cream
  • 4 eggs
  • 100 g white sugar
  • 50 g brown sugar
  • 2 tsp vanilla extract

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Preheat the oven to 175°C (top/bottom heat) and mix together the dry ingredients. Melt the butter and dark chocolate in a saucepan, then pour into the bowl of a mixer and let cool for about 10 minutes. Grease a baking pan and line it with a large piece of baking paper. Mix the white and brown sugar into the cooled chocolate-butter mixture, gradually adding the eggs and food coloring. Then add the vanilla and then the dry ingredients in three steps. Pour the brownie batter into the baking pan. Beat all the topping ingredients until smooth and pour over the brownie mixture. Marble the two mixtures with a knife. Cover with aluminum foil and bake for about 45-50 minutes. Let cool completely before cutting.
