Red Wine Cream with Fresh Figs

- 400 ml Red wine
- 100 ml Currant juice
- 80 g Sugar
- 6 sheet Gelatin
- 500 g Figs
- 1 a cup Cream
- 10 ml Cassis
- 1 blackboard Dark chocolate
- Heat the red wine, currant juice and sugar in the saucepan (do not boil). Soak gelatin in water for 10 minutes, then add to the wine and juice.
- Put the pot in the cold (also works in a water bath) – it is important that it is always stirred in between. In the meantime, whip the cream.
- When the liquid in the saucepan starts to get creamy, fold in the cream. Then fill into small glasses and place covered in the refrigerator.
- Wash and quarter the figs. Then marinate with cassis. Finally, grate the dark chocolate over the dessert plate.
