Redfish fillet on a bed of rice

Ingredients for 4 servings:

  • 4 redfish fillets or other fish fillets of your choice
  • 1 tbsp lemon juice
  • 250 g rice
  • 30 g butter
  • 100 g processed cheese
  • 3 tbsp mustard
  • 250 ml cream
  • 3 egg yolks
  • 1 tsp dill
  • e.g. salt and pepper
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Simple recipe for fish fillets, the sauce is awesome!

Cook rice according to the instructions until tender, drain well. Preheat oven to 200°C. Defrost the fish fillet if necessary (2 hours in advance), season with salt and pepper, and drizzle with a little lemon juice. For the sauce, melt the butter in a saucepan with the cream cheese, salt, and pepper. Whisk 3 egg yolks and remove the saucepan from the heat. Fold the egg yolks into the sauce; do not let it boil. Place the rice in a greased baking dish, arrange the fish fillets on top of the rice, and pour the sauce over it. Place the baking dish in the preheated oven and bake for about 25 minutes. Garnish with dill before serving.
