Ingredients for 8 servings:

  • 250 g cooked prawns or crayfish
  • 250 g minced beef
  • 2 shallots
  • 1 garlic clove(s)
  • 1 pinch of baking powder
  • 2 slices of toast
  • butter
  • pepper
  • Salt

Finger food and party snacks

“Reef and Beef” is the Australian version of the American “Surf and Turf.” The dish consists of a beef fillet and one or half a crayfish. I adapted this dish slightly and skewered the considerably smaller ingredients on toothpicks as a finger food or party snack. Dice the shallots and garlic into tiny cubes and sauté them in a little butter until translucent, then let cool. Season the minced meat with pepper and salt, add the baking powder and the sautéed cubes, and knead thoroughly. Let rest in the refrigerator for about 2 hours. Cut the crust off the slices of toast all around and then cut them into 10-15 mm squares. These will be the legs of the stickers. Heat the butter in a non-stick pan, add salt, and lightly brown the bread on both sides over medium heat. Drain on kitchen paper and let cool. Form the minced meat into balls about 15 mm in diameter and brown them all over in butter in a pan over medium heat. Drain on kitchen paper and let cool. Select the best shrimp or crayfish and thread them onto toothpicks in this order: shrimp, meatballs, and bread. Make a few more, because these things are a hit at every party.
