Ingredients for 6 servings:
- 250 g mascarpone
- 250 g quark
- 1 can pineapple (pieces)
- 125 ml pineapple juice
- 100 g sugar
- 200 g cream
- 30 g biscuits (amaretti biscuits)
- 125 ml eggnog
- 10 g butter
- 100 g almonds, sliced
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Drain the pineapple pieces and reserving the juice. Whisk the mascarpone and quark with the pineapple juice until smooth, stir in the sugar, whip the cream until stiff, and fold it into the mascarpone and quark mixture. Fill 6 dessert bowls with a little of the mascarpone and quark mixture and scatter the amaretti over the mixture. Drizzle half of the egg liqueur over the amaretti, then top with the pineapple pieces. Spread the remaining mascarpone mixture on top and drizzle with the remaining egg liqueur. Melt the butter in a pan, toast the flaked almonds, and then sprinkle over the desserts. To finish, place an amaretti on top of each dessert. Keep refrigerated until ready to serve; they can also be made the day before.
