Refreshing Limoncello Basil Muffins

Ingredients for 1 servings:

  • 2 apples
  • 15 basil leaves
  • 280 g flour
  • 70 g soft wheat semolina
  • 100 ml vegetable oil, neutral
  • 150 g sugar
  • 120 ml Limoncello
  • 2 lime juice
  • 1 tsp lime(s) or lemon, organic, zest
  • 2 tbsp Amaretto
  • 1 pinch of salt
  • 2 tsp baking powder
  • 80 g powdered sugar
  • 1 ½ tbsp lime juice
  • 5 basil leaves, cut into fine strips

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Peel and coarsely grate the apples. Finely slice the basil leaves. Combine all the batter ingredients (except 1.5 tablespoons of lime juice, 1/4 of the basil leaves, and powdered sugar) in a mixing bowl and mix with a spoon or a hand mixer. Line a muffin tin with paper baking cups and fill the cups almost to the brim with batter. Bake in a preheated oven at 180-200°C (top and bottom heat) for about 15-18 minutes. Mix the powdered sugar and lime juice until thick and sticky. Spoon onto the muffins while they’re still hot and arrange fine basil strips on top. Let cool and enjoy. Makes about 16-18 muffins.
