Refreshing tomato salad

Ingredients for 1 servings:

  • 4 m.-sized tomatoes
  • ¼ onion(s)
  • 35 g mozzarella
  • 2 tbsp olive oil, more if needed
  • 1 tbsp balsamic vinegar
  • 1 slice(s) of bread
  • herbal salt
  • pepper

Instructions

First, wash the tomatoes, chop them into bite-sized pieces, and place them in a bowl. Add the tomato juice. Chop the mozzarella into small pieces and add it to the bowl. Cut the onion into small pieces. Add 1 tablespoon of oil to the pan and add the onions, then fry briefly (!) over low heat until translucent. Let the onions cool in a small bowl. Meanwhile, trim the edges of the bread and cut the bread into small cubes. Toast them in the remaining oil in the pan. Add another teaspoon of oil if necessary. In a separate small bowl, mix the balsamic vinegar and 1 tablespoon of oil. Add the cooled onions to the tomato salad. Add the dressing as well. Season to taste with herb salt and pepper, and finish with the toasted croutons. Delicious as a side dish or for dinner on summer days.
