Ingredients for 1 servings:

  • 300 g sugar
  • 250 g butter
  • 5 eggs, separated
  • 1 packet of vanilla sugar
  • 500 g flour or
  • 250 g flour and
  • 250 g starch flour
  • 1 pinch of salt
  • 200 ml milk, approx.

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Total time approx. 50 minutes

Basic recipe according to Grandma

Separate the eggs and, with the help of a pinch of salt, beat the egg whites until stiff peaks form. Beat the softened butter with the sugar until fluffy, then gradually add the egg yolks and vanilla sugar. Beat everything on high for 3 minutes. Add the milk and beat briefly again. Sift the flour or flour-starch mixture over the mixture and mix briefly again. (Do not beat; it’s best to mix with a spoon). Finally, carefully fold in the stiffly beaten egg whites. Place a cloth over the bowl and let the batter rest for 20 minutes. Brush the heated waffle iron with a little oil and pour in some batter. After about 2 minutes of baking (depending on the appliance), carefully remove the waffles. Brush the waffle iron with oil again and pour in some more batter. Sprinkle the finished waffles with sugar and cinnamon, if desired, or serve with applesauce. The waffles will be nice and crispy thanks to the high sugar content.
