Regina's pot cake with apples

Ingredients for 1 servings:

  • 1 kg apples, sour
  • 1 pinch of cinnamon
  • Sugar as needed
  • 2 tbsp butter
  • 125 g butter
  • 150 g sugar
  • 250 g layered cheese (crumbly curd)
  • 150 g quark (cottage cheese)
  • 3 eggs, separated
  • 1 pinch of salt
  • 1 piece(s) pudding powder, vanilla
  • ½ lemon(s), juice
  • Milk

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the apples, remove the cores, and dice the flesh. Marinate with cinnamon and a little sugar. Melt 2 tablespoons of butter in a pan, add the apples, and fry until foamy, turning them dark brown and thickening the juice. Let cool. Beat 3 egg whites with a pinch of salt until stiff peaks form. Beat 2 1/2 egg yolks with 125g butter and 150g sugar until fluffy. Stir in the crumbly and regular curd cheese, the custard powder, and the lemon juice. Finally, fold in the apples and beaten egg whites. Pour the batter into a springform pan. Mix the remaining egg yolks with 1 1/2 tablespoons of milk and drizzle over the cake. Bake at 140°C for 85 minutes.
