Rhubarb Chia Groats with Cream

The perfect rhubarb chia groats with cream recipe with a picture and simple step-by-step instructions.

  • 1 tbsp Chia seeds
  • 6 tbsp Water
  • 500 g Fresh rhubarb
  • 1 Vanilla pod
  • 50 g Sugar
  • 5 tbsp Water
  • 100 ml Whipped cream
  1. Mix 6 tbsp water and 1 tbsp chia seeds.
  2. Wash and clean the rhubarb and cut into 2cm wide pieces. Cut the vanilla pod lengthways and scrape out the pulp with a knife. Mix the rhubarb, vanilla pulp, vanilla pod, sugar and 5 tbsp water in a saucepan, cover and bring to the boil. Let simmer over a mild heat for 10-15 minutes. Remove the vanilla pod and add the chia gel stir the compote.
  3. Lightly whip the whipped cream with a whisk. Arrange rhubarb chia grits on plates and serve with the cream.
