Rhubarb Chia Groats with Cream
The perfect rhubarb chia groats with cream recipe with a picture and simple step-by-step instructions.
- 1 tbsp Chia seeds
- 6 tbsp Water
- 500 g Fresh rhubarb
- 1 Vanilla pod
- 50 g Sugar
- 5 tbsp Water
- 100 ml Whipped cream
- Mix 6 tbsp water and 1 tbsp chia seeds.
- Wash and clean the rhubarb and cut into 2cm wide pieces. Cut the vanilla pod lengthways and scrape out the pulp with a knife. Mix the rhubarb, vanilla pulp, vanilla pod, sugar and 5 tbsp water in a saucepan, cover and bring to the boil. Let simmer over a mild heat for 10-15 minutes. Remove the vanilla pod and add the chia gel stir the compote.
- Lightly whip the whipped cream with a whisk. Arrange rhubarb chia grits on plates and serve with the cream.
