Rhubarb Pudding

The perfect rhubarb pudding recipe with a picture and simple step-by-step instructions.

  • 1 Kg Rhubarb
  • 1 packet Custard powder
  • 4 Eggs
  • 1 a cup Cream
  • 1 a cup Sour cream
  • 100 g Sugar
  1. Peel the rhubarb into small pieces and add 3 tbsp in the water. Boil the sugar for approx. 5 minutes.
  2. Put the vanilla pudding powder in a mixing bowl, add the eggs, cream, sour cream and sugar, mix well with a mixer and pour over the rhubarb, bring to the boil while stirring, pour into compote bowls and allow to cool.
  3. Let rest for a few hours in the refrigerator and serve.
