Ingredients for 2 servings:
- 200 g carrot(s)
- 4 spring onions
- 1 garlic clove(s)
- 20 g fresh ginger
- ½ chili pepper(s), red
- 200 g tagliatelle noodles, Asian (Asian shop)
- 2 tbsp oil
- 200 g minced meat, mixed
- 1 tbsp soy sauce
- 200 ml tomato(s), pureed
- 1 pinch(s) of sugar
- some lime juice
- 2 tbsp coriander greens, chopped
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the carrots, trim the spring onions, and slice both into thin strips. Peel the garlic clove and the ginger. Chop both, including the chili pepper. Cook the Asian tagliatelle noodles according to the package instructions, then drain and set aside. Heat 1 tablespoon of oil in a wok and fry the minced meat until brown and crumbly. Season with ½ tablespoon of soy sauce and remove from the pan. Add 1 tablespoon of oil to the wok and fry the carrots, spring onions, garlic, ginger, and chili for about 4 minutes. Add the passata, 2 tablespoons of soy sauce, and 50 ml of water and bring to a boil. Stir in the minced meat and simmer for a few minutes longer. Season to taste with 1 pinch of sugar and a few squeezes of lime juice. Stir in the tagliatelle noodles and serve sprinkled with coriander.
