Ingredients for 4 servings:

  • 1 kg spare ribs
  • 500 ml water
  • 2 onions
  • 3 garlic cloves
  • salt and pepper
  • Herbs and spices of your choice

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

simple recipe, but delicious result

Preheat oven to approximately 180 degrees Celsius (top/bottom heat). Cut the ribs, if not already purchased as such, into small pieces and season with salt and pepper on both sides, then place them on a grill rack without baking paper. Fill a deep baking tray with water. Peel the onion and garlic, roughly quarter the onion, separate the layers, and toss them in the water along with the garlic. Now add the herbs and spices to the water as well. The rule of thumb is: whatever tastes good goes. I always use various Italian herbs, spice blends, and some chili flakes—basically, whatever your spice pantry has to offer. Now place the grill rack slightly above the middle of the oven, with the baking tray underneath. Baste the ribs with the stock every 15 minutes or so, turning them halfway through. The onions can be served as a side dish afterward, and I like to preserve the stock to liven up sauces or stews a bit.
