Ingredients for 2 servings:
- 2 ribs, cooked
- 2 onions
- 2 cloves garlic
- 2 tsp thyme
- 2 tsp basil
- 4 tbsp tomato paste
- 1 tsp, heaped honey
- 6 tbsp vinegar (brandy vinegar)
- 1 tsp cayenne pepper
- 4 tbsp olive oil
- 6 tsp lemon juice
- Salt
- pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 30 minutes
slightly spicy tomato-lemon marinade
Combine all ingredients, except the ribs, in a bowl and puree. Rinse the ribs and pat them dry, place them in a baking dish, and brush them with the marinade. Place the whole thing in the oven for 25 minutes, then brush again and return it to the oven. After another 15 minutes, turn the ribs and brush them with the marinade again. Then return it to the oven for another 40 minutes. Preheat oven to 200°C and roast at 180°C using top/bottom heat. Serve with a variety of salads and baguette.
