Ingredients for 1 servings:

  • 250 ml basmati rice
  • 1,000 ml water
  • 8 tbsp Parmesan, finely grated
  • 4 tbsp tomatoes, dried and finely diced
  • 50 g leaf spinach, cooked
  • 1 half red bell pepper(s), finely diced
  • 4 tbsp sesame seeds, lightly toasted
  • some salt
  • some nutmeg, grated
  • some black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Depending on the size of the balls, they can be used as a side dish or as finger food

Cook the rice according to the package instructions and to your taste until al dente. Remove from the heat and mix in the Parmesan cheese thoroughly. Combine the vegetables with the seasonings and add to the rice, mixing well. With wet hands, form into balls, adjusting the size to your liking. Serve the rice balls while still lukewarm; they won’t taste as good cold.
