Ingredients for 4 servings:
- 12 mushrooms (giant mushrooms), hollowed out
- 4 tbsp Pesto Genovese
- 4 tbsp ricotta
- 4 tsp Parmesan, finely grated
- 2 tsp lemon zest
- some lemon pepper
- 1 half red bell pepper(s), finely diced or pureed
- 1 tsp tomato paste
- some paprika powder
- 1 tsp olive oil
- some garlic salt
- some garlic pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Fill 4 mushrooms each with the corresponding colored mixture: Green: Pesto Genovese or any other green pesto, homemade or ready-made; there are many recipes here. White: Mix ricotta with Parmesan, lemon zest, and lemon pepper. Red: Mix the bell peppers with tomato paste, paprika, oil, garlic salt, and pepper. If you don’t have garlic salt and/or garlic pepper, you can use garlic powder or fresh garlic. Place the mushrooms in the oven preheated to 180°C and bake for about 15 minutes. It can be served as an appetizer, side dish, or even as a small main course, then serve with fresh baguette.
