Baked beans in a bacon basket

Ingredients for 6 servings:

  • 24 slices of bacon
  • 500 g white beans
  • some olive oil for frying
  • 1 medium-sized onion(s), finely chopped
  • 2 tbsp honey
  • 2 tbsp cane sugar
  • 6 slice(s) bacon, cut into small pieces
  • 1 dl port wine
  • 4 tbsp parsley, finely chopped
  • some cayenne pepper
  • some sea salt

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Sauté the onions in olive oil until translucent and add the beans, either canned or dried and prepared accordingly. Then stir in the honey, sugar, finely chopped bacon, port wine, and 3 tablespoons of parsley, along with pepper and salt. Simmer for about 30 minutes, then remove from the heat and let cool to room temperature. Meanwhile, place 3 slices of bacon over each of the upturned muffin cups and top with a fourth slice around the bottom of the cup, securing with a toothpick if desired. Place on a baking sheet in the oven preheated to 180°C for about 20 minutes, then drain on kitchen paper and let cool. Fill the bacon baskets with the beans and decorate with the remaining parsley. Tip: instead of muffin cups, you can also use ovenproof glasses or mugs.
