Rice casserole

Ingredients for 2 servings:

  • 1 bag of rice
  • 350 g diced ham, raw
  • 1 vegetable onion(s)
  • 2 tbsp olive oil
  • 4 tomatoes
  • 400 g peas, young
  • 1 corner(s) of processed cheese
  • 250 ml sweet cream
  • 1 egg(s)
  • 1 pinch of salt
  • Pepper, freshly ground
  • basil leaves

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Prepare the rice according to the package instructions. Preheat the oven to 200°C (top/bottom heat). Finely dice the onion and fry in a little oil, along with the diced ham. Blanch the tomatoes in hot water, peel, and dice them. Dice the processed cheese as well. Add the cooked rice, peas, tomatoes, and cheese to the onions and ham and mix well. Simmer for 2 minutes. Grease a casserole dish and add the vegetable rice. Place in the preheated oven for 15 minutes. Then mix the egg with the cream and pour over the dish. Return the casserole to the oven for another 20 minutes. Garnish with basil.
