Ingredients for 2 servings:
- 1 liter of milk
- 200 g rice pudding
- Lemon(s) – peel, grated
- 50 g butter or margarine
- 75 g sugar
- 1 packet of vanilla sugar
- 3 eggs
- 2 drops flavoring (lemon)
- 2 drops of bitter almond flavor
- 1 packet of pudding powder (vanilla)
- 2 tsp baking powder
- 100 g flour
- 3 tbsp almonds, chopped
- 2 tbsp raisins
- 30 g breadcrumbs
- some butter for the mold
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Bring the milk and salt to a boil and add the rice pudding. Immediately reduce the heat to low and stir frequently. The rice pudding will take about 20-30 minutes to cook. Then let the mixture cool. Now proceed as you would with a cake: Cream the butter or margarine until fluffy. Add the sugar, vanilla sugar, eggs, pudding powder, lemon zest, bitter almond oil, and lemon flavoring. Then add the rice pudding and the flour mixed with the baking powder. Finally, fold in the chopped almonds and raisins. Pour this mixture into a baking dish greased with breadcrumbs, sprinkle with breadcrumbs, and top with knobs of butter, if desired. Bake in a preheated oven at 180°C for about 40-50 minutes.
