Ingredients for 2 servings:
- 1 onion(s)
- 1 garlic clove(s)
- 2 tbsp olive oil
- 250 g minced meat, mixed
- 1 tbsp tomato paste
- 1 tbsp ajvar
- 150 g rice
- 500 ml vegetable stock
- 1 red bell pepper(s)
- salt and pepper
- Cayenne pepper
- 1 tsp paprika powder
- 2 tbsp cream
- possibly grated Parmesan
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
with minced meat
Peel the onions and dice them into small cubes. Peel and finely chop the garlic clove. Heat the olive oil in a pan and fry the minced meat for about 3 minutes, then add the onions and garlic and continue frying. Add the tomato paste and rice and stir in. Pour in the vegetable stock, season with salt, pepper, and cayenne pepper, and then add the ajvar. Bring to a boil briefly, then simmer with the lid on over medium heat for about 15 minutes, stirring occasionally. Cut the bell pepper into strips and stir into the rice after 5 minutes of cooking. Finally, stir in the paprika and cream. If you like, you can also sprinkle with grated Parmesan cheese for a spicy touch.
