Rice noodles with mushrooms and peas

Ingredients for 1 servings:

  • 1 cup noodles (rice noodles, kritharaki)
  • 2 tbsp olive oil
  • 1 onion(s), diced
  • 1 garlic clove(s), chopped
  • 8 mushrooms, sliced
  • ½ cup peas, frozen
  • 4 tbsp Parmesan, freshly grated
  • 2 tbsp parsley, freshly chopped
  • salt and pepper, pepper
  • Vegetable broth, granulated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Kritharakia

Cook the peas in salted water for 3 to 4 minutes. Heat the olive oil in a pan and briefly sauté the onions and garlic. Add the mushrooms, fry, and season with salt, pepper, and granulated stock. Cook the rice noodles in salted water according to the package instructions, drain, and add to the mushrooms. Add the drained peas, parsley, and Parmesan cheese, and mix well. Serve immediately.
