Rice pan with minced meat and tomatoes

Ingredients for 4 servings:

  • 2 onions, chopped
  • 2 tbsp olive oil, for frying
  • 500 g minced beef
  • some salt and pepper
  • ½ tsp sweet paprika powder
  • 1 liter vegetable broth, approx.
  • 50 g tomato paste
  • 300 g rice
  • 1 handful of parsley, chopped
  • 10 cocktail tomatoes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Sauté the onions in olive oil in a large pan, add the minced meat, and cook until well-cooked. Season with salt, pepper, and paprika. Pour in the broth, stir in the tomato paste, and add the rice. Cover and simmer for approximately 20-25 minutes, depending on the specified cooking time, until the rice is tender. Depending on the type of rice, you may need more or less broth. Wash and halve the tomatoes, then stir them into the rice with the parsley for the last 5 minutes before the end of the cooking time.
