Spicy rice with minced meat

Ingredients for 5 servings:

  • e.g. rapeseed oil, sunflower oil or other
  • 500 g minced meat, mixed
  • 500 g mushrooms
  • 1 large bell pepper(s), red and yellow
  • 1 garlic clove(s)
  • 1 can tomatoes, chopped
  • 4 dashes ketchup, hot
  • 3 tbsp, leveled curry powder
  • 1 tbsp, leveled cayenne pepper
  • e.g. salt and pepper
  • 3 bags of long grain rice, e.g. 8 minute rice
  • 1 bunch of flat-leaf parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Cook the rice according to the package instructions, drain, and set aside. Fry the minced meat in oil in a pan and set aside in a bowl. In the same pan, roast the finely chopped bell peppers, finely diced garlic, and finely chopped mushrooms. Mix with curry powder and cayenne pepper, and season with salt and pepper. Stir in the tomatoes and mix everything with the cooked rice and minced meat. Stir in the ketchup. Simmer for about 10-15 minutes over medium heat, stirring occasionally. Season with salt and pepper. Pluck and finely chop the parsley leaves, stir in half, and use the other half as a topping.
