Rice pan with turkey strips

Ingredients for 2 servings:

  • 1 cup of rice
  • 1 zucchini
  • 1 carrot(s)
  • 1 onion(s)
  • 1 handful of peas (frozen)
  • 250 g turkey meat, shredded
  • some oil
  • 2 cups broth
  • 1 tsp sambal oelek

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Peel and finely dice the onion and carrot. Wash the zucchini and also cut into small pieces. Mix the turkey strips with the sambal oelek and fry briefly in a deep pan or saucepan with a little oil over high heat. If you like it a bit spicier, you can use more chili paste. Add the onion and fry briefly. Then add the zucchini, peas, carrot, and rice to the pan and deglaze with the stock. Cover and simmer over low heat until the liquid has evaporated (10-15 minutes, depending on the type of rice). This dish is super quick and inexpensive to cook and makes a pleasant change from cafeteria food.
