Rice patties with salad

Ingredients for 4 servings:

  • 250 g rice (long grain rice)
  • 100 g spring onions
  • salt and pepper
  • 400 g tomatoes
  • 1 onion(s)
  • 200 g lamb’s lettuce
  • 4 tbsp vinegar
  • 8 tbsp oil
  • 100 g Parmesan
  • 125 g quark
  • 2 eggs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the rice until tender. Finely chop the spring onions and onion. Slice the tomatoes. Combine the vinegar with 4 tablespoons of oil, salt, and pepper. Mix the tomatoes and chopped onion with the vinaigrette. Pour over the cleaned lamb’s lettuce. Mix the rice with the grated Parmesan cheese and the spring onions. Stir in the quark and eggs and season with salt and pepper. Shape the mixture into 12 rice discs. Heat 4 tablespoons of oil in a pan and fry the rice discs until golden brown. Serve with the salad. Ketchup goes well with the salad.
