Rice Pot with Legumes
The perfect rice pot with legumes recipe with a picture and simple step-by-step instructions.
- 500 g Pork strips
- 1 Cup Rice
- 1 Cup Red lenses
- 1 Can Chickpeas
- 1 Can White beans
- 1 Can Black beans
- 1 Can Corn
- 1 Onion
- 1 bunch Soup vegetables
- 1 tbsp Tomato paste
- 1 tsp. Harissa paste
- 1,5 liter Vegetable broth
- 2 Bay leaves
- Salt
- Pepper
- Hot paprika powder
- Chili powder
- Tzaziki
- Clean and chop the soup vegetables, peel the onions and sauté everything with the meat in olive oil.
- Stir in the harissa paste and tomato paste, add the lentils and rice, deglaze with the vegetable stock and simmer over a medium heat for approx. 40 minutes. Stirring occasionally.
- Now add the spices, the black and white beans, the chickpeas and the corn, mix everything well and simmer gently for another 10 minutes.
- Arrange the stew on plates (I used Bulgarian soup pots here) and serve with a dollop of tzaziki (see my KB).
