Rice Pot with Legumes

The perfect rice pot with legumes recipe with a picture and simple step-by-step instructions.

  • 500 g Pork strips
  • 1 Cup Rice
  • 1 Cup Red lenses
  • 1 Can Chickpeas
  • 1 Can White beans
  • 1 Can Black beans
  • 1 Can Corn
  • 1 Onion
  • 1 bunch Soup vegetables
  • 1 tbsp Tomato paste
  • 1 tsp. Harissa paste
  • 1,5 liter Vegetable broth
  • 2 Bay leaves
  • Salt
  • Pepper
  • Hot paprika powder
  • Chili powder
  • Tzaziki
  1. Clean and chop the soup vegetables, peel the onions and sauté everything with the meat in olive oil.
  2. Stir in the harissa paste and tomato paste, add the lentils and rice, deglaze with the vegetable stock and simmer over a medium heat for approx. 40 minutes. Stirring occasionally.
  3. Now add the spices, the black and white beans, the chickpeas and the corn, mix everything well and simmer gently for another 10 minutes.
  4. Arrange the stew on plates (I used Bulgarian soup pots here) and serve with a dollop of tzaziki (see my KB).
