Rice pot with mozzarella

Ingredients for 2 servings:

  • 1 cup rice
  • 2 cups water
  • salt and pepper
  • 1 can peas, possibly with carrots
  • 1 can of corn
  • 250g mozzarella

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

quick and tasty

Place the rice in a pot with the water and a pinch of salt and cook until the water is absorbed by the rice. Meanwhile, cut the mozzarella into small pieces. Then mix the can of peas and corn into the rice and season with salt and pepper to taste. Then, over low heat, stir in the mozzarella until it starts to form strings. Feel free to vary this with other vegetables or cheese.
