Rice pudding à la Leilah

Ingredients for 8 servings:

  • 1,250 ml milk
  • 250 ml cream
  • 100 g sugar
  • 1 pinch of salt
  • 25 g vanilla sugar
  • 1 packet of vanilla pudding powder
  • 250 g rice pudding
  • 1 jar fruit, e.g. cherries
  • Cinnamon powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 2 hours 10 minutes; Total time approx. 2 hours 30 minutes

Bring 1 liter of milk to a boil. Add cream, sugar, salt, and vanilla sugar. Mix the pudding mix into the remaining milk and stir into the boiling milk, then add the rice pudding. Bring to a boil briefly, then simmer over very low heat for about 90 to 120 minutes, stirring occasionally with a whisk. After 90 minutes, stir in the fruit juice. After another 30 minutes, carefully fold in the fruit and season with cinnamon powder, if desired. Tip: Serve warm or cold, perhaps with a dollop of whipped cream. Keeps well in a tightly sealed Tupperware container in the refrigerator for several days. Also works well with other fruit, such as tangerines or peaches.
