Ingredients for 4 servings:
- 400 g rice pudding, cooked, sweetened
- 2 eggs
- 150 g yogurt
- 8 apricots
- 1 tbsp sweetener
- Vanilla pulp from one pod
- 1 tsp cornstarch
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Mix all ingredients, except the fruit, and pour into a round, lightly greased baking dish. Halve the apricots and place them on top. Bake in a preheated oven at 170 degrees Celsius (350 degrees Fahrenheit) for about 30 minutes. Let cool and dust with powdered sugar to serve.
