Ingredients for 3 servings:

  • 120 g rice, dry
  • 2 medium-sized bell peppers, red
  • 1 m.-large kohlrabi
  • 3 m.-sized carrot(s)
  • 8 m.-sized gherkins
  • 1 m.-sized apple
  • 250 g low-fat yogurt
  • 5 tbsp pickle liquid (pickle jar)
  • 3 tsp mustard
  • 3 tbsp vinegar
  • salt and pepper
  • Paprika powder
  • Garlic granules
  • 1 pinch(s) of sugar

Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour

Cook the rice until tender and let cool. Peel the kohlrabi, carrots, and apple, then coarsely grate them. Dice the gherkins and bell peppers. Make the marinade from the listed ingredients, season to taste, and mix everything together in a large bowl. Let the salad sit for another 30 minutes and enjoy! Calculations: Rice = 11 PP, Yogurt = 2 PP, the other ingredients are 0 PP! Total = 13 : 3 people, that’s 4 PP per person!
