Ingredients for 6 servings:
- 250 g rice
- 200 g smoked pork, cooked
- 1 onion(s)
- 1 tbsp herbs, chopped
- 100 g olives (stuffed if you like, for the look)
- 1 small can of corn
- ½ bell pepper(s), green
- 3 tbsp oil
- 2 tbsp vinegar
- Salt
- pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour
Cook the washed rice until tender and let cool. Cut the smoked pork into thin strips. Peel the onion and slice it into rings. Mix everything with the herbs, sliced olives, and drained corn kernels. Deseed and slice the bell pepper, then add it. For the marinade, combine the oil, vinegar, salt, pepper, and 2 tablespoons of water and pour over the salad. Let it marinate for at least 30 minutes.
