Rice salad with apple

Ingredients for 1 servings:

  • ½ liter of water
  • Salt
  • 130 g rice (long grain rice)
  • 2 apples (200 g)
  • 1 onion(s) (40 g)
  • 2 bell peppers, green
  • 200 g ham, cooked
  • 200 g cheese (Gouda or Edam)
  • 1 bunch of parsley
  • 2 tbsp vinegar (wine vinegar)
  • some pepper, white
  • 1 tsp mustard
  • 4 tbsp oil (40 g)
  • 2 tomatoes
  • 1 egg(s), boiled

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Bring salted water to a boil in a pot. Add the rice, cover, and let it swell for 20 minutes. Drain in a sieve and rinse with cold water. Transfer to a bowl and let cool. Peel the apples and onion, then finely dice them. Quarter, deseed, and wash the peppers, then finely slice them, along with the cooked ham and cheese. Rinse and chop the parsley (leaving a few stalks for garnish). Mix everything with the rice. Mix the wine vinegar with salt, pepper, mustard, and oil in a small bowl. Pour over the salad. Let the salad marinate for 60 minutes. Mix again and season to taste. Wash the tomatoes and remove the stems. Slice the tomatoes and peeled egg. Serve the salad garnished with tomato and egg slices and parsley.
