Ingredients for 2 servings:
- ¼ pineapple
- 200 g mushrooms
- 100 g peach(s), possibly from the can
- 250 g chicken, shredded
- 1 cup rice
- 2 cups salt water
- 100 ml coconut milk
- 50 ml peach juice from the can
- curry powder
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
For the rice, bring about 1 cup of rice to a boil with twice the amount of water and a little salt. Then simmer on low heat until the water has evaporated. For the sauce, chop the chicken and fry. Quarter or chop the pineapple, peaches, and mushrooms and add them. Season with salt, pepper, and curry powder. Fry for about 5-10 minutes, then deglaze with coconut milk and peach juice. Serve the rice with the sauce.
