Ingredients for 4 servings:
- 350 g ricotta, from sheep
- 2 eggs
- 150 g breadcrumbs
- 50 g cheese (Pecorino), grated
- 50 g Parmesan, grated
- 1 garlic clove(s), chopped
- ½ bunch parsley, chopped
- Pepper, from the mill
- some salt
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes
Combine all ingredients in a bowl and mix until smooth. Refrigerate for 30 minutes. Line a baking sheet with parchment paper. With wet hands, form small patties and place them on the baking sheet. Bake in an oven preheated to 180°C for approximately 25-30 minutes, until golden brown. The ricotta fries can be served as an appetizer or as a vegetarian main course with salad.
