Ingredients for 1 servings:

  • 250 g butter, soft
  • 175 g sugar
  • 1 small egg(s)
  • 1 pinch of salt
  • 2 vanilla pods, including the pulp
  • 1 tonka bean(s), grated
  • 250 g flour
  • 150 g cornstarch

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

wonderfully soft and fluffy with a hint of tonka bean, makes about 100 pieces

Cream the butter, sugar, egg, vanilla seeds, tonka bean, and salt until fluffy and the sugar dissolves and the mixture is nice and creamy. Stir in the flour and cornstarch and quickly knead in. This works best with a stand mixer’s dough hook, as the dough will be very soft. Using cling film, shape the dough into logs and chill thoroughly. Cut into slices, place them on baking sheets, and bake at 175 degrees Celsius (convection oven) for about 10 minutes until golden brown.
