Risotto with shrimp

Ingredients for 3 servings:

  • 250 g shrimp(s), ideal are Black Tiger
  • 1 onion(s)
  • 2 garlic cloves
  • 1 bay leaf
  • 250 g tomatoes, fresh or from a can
  • 1 tbsp tomato paste
  • 300 g risotto rice
  • 900 ml water
  • 1 bunch of parsley
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

In a saucepan, sauté the onion and garlic in olive oil. Add the shrimp and fry for about 5 minutes. Then add the rice, tomatoes, tomato paste, bay leaf, salt, and pepper, stir briefly, then add the water. Cook the risotto at low heat for 12-15 minutes. Finally, add the chopped parsley.
