Ingredients for 6 servings:

  • 2 kg beef (sirloin/roast beef or other), whole
  • 2 banana leaves, fresh
  • Spice(s) to taste
  • Salt
  • Nettles

Instructions

Working time approx. 2 hours; Cooking/baking time approx. 5 hours; Total time approx. 7 hours

First, the meat is rubbed with spices of your choice and salt. Then, about 7-10 fist-sized stones (paving stones are ideal) are placed in a fire for at least 2 hours. While the stones are heating, find a nice spot in the garden and dig a hole about 60 cm in diameter and 40 cm deep. Then look for fresh nettles or other fresh herbs. You can also use green cuttings, but they must not contain autumn crocus, buttercup, etc. These are poisonous! The hard core of the banana leaf must be pounded out with a stick or the back of a knife, then the meat must be wrapped in it and tied tightly. First, place the hot stones in the hole, then place half of the nettles on top, then the package of meat and the rest of the nettles. Cover the hole with the excavated earth. Now, keep a nice fire going over the hole for 4-5 hours. During the last hour, you can let the embers settle to make it easier to dig out the meat. You can also cook chicken, lamb, or fish this way.
