Ingredients for 1 servings:
- 450 g flour
- 300 g sugar
- 375 g butter
- 2 m.-sized eggs
- 2 pinches of salt
- 1 kg apple
- ½ lemon(s) (juice and zest)
- 150 g raisins
- 75 g almond sticks
- 1 tsp cinnamon
- 50 g sugar
- 2 pinches of salt
- 200 g powdered sugar
- 1 lemon(s) (juice)
- some water
- ½ pack of almond flakes
- 1 bunch lemon balm
Instructions
Working time approx. 40 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 40 minutes
makes 15 – 20 pieces
Form a smooth dough from the dough ingredients, wrap it in cling film, and let it rest in the refrigerator for 2 hours. Wash, peel, halve, core, and dice the apples. Place the diced apples in a bowl and mix with the lemon juice and zest, raisins, almonds, salt, sugar, and cinnamon. Roll out half of the dough and place it on a greased baking sheet. Prick it several times with a fork. Spread the prepared filling on the dough. Roll out the other half of the dough thinly and place it over the apple mixture to form a lid. Carefully trim off the excess edges, knead again, and shape into a 1 cm thick roll. Place this roll of dough around the edge of the cake, press down gently, and use a fork to create a pattern. Bake the cake at 180-200°C (top/bottom heat) for 50 to 60 minutes. Make a glaze from the powdered sugar, lemon juice, and water. Spread this on the cooled cake and sprinkle with the almond flakes. Top with 15-20 small lemon balm sprigs. Cut the cake into 15-20 slices, place on a cake plate, and serve.
