Greetings from Greece…
Have the butcher cut the beef from the leg into four thin slices. Peel the onion and garlic. Quarter the onion and thinly slice the garlic. Mix the gyro seasoning with 3 tablespoons of olive oil. Brush the first slice of meat with olive oil on one side and the gyro seasoning on the other. Distribute one-third of the onion rings and garlic slices on top. Brush the second slice of meat with the seasoning on both sides and place it on top of the first slice. Repeat with the third slice and the fourth slice as with the first. Now tie everything together with kitchen string to form a nice parcel, cover it, and let it marinate in the refrigerator for three hours. Heat the remaining oil with butter in an ovenproof pan and sear the meat on both sides. Then cover and roast in a preheated oven at 175°C (top/bottom heat) for about 1.5 hours, basting with any cooking juices occasionally. Leave the lid uncovered for the last 20 minutes. Remove the kitchen string and cut the meat into very thin slices. Season with salt. Serve with baked potatoes and tzatziki, if desired.
