Roast Beef, Old Style
The perfect roast beef, old style recipe with a picture and simple step-by-step instructions.
- 1,5 kg Beef leg
- 5 piece Onion
- 1 bunch Soup greens fresh
- 0,25 liter Red wine
- 2 teaspoon Pepper from the grinder
- 1 teaspoon Mustard powder
- 3 piece Juniper berry
- 1 piece Bay leaf
- 3 teaspoon Salt
- 100 g Smoked bacon
- 100 g Margarine
- 1 liter Beef stock
- Clean and chop the soup greens. Be careful, only use one carrot from here, otherwise things will become too dominant.
- Leave out the bacon, in it sauté the chopped onion until translucent. Parking onions on a plate.
- Fry the vegetables very tightly in margarine and park.
- Make a spice mixture from the spices in a mortar. The mustard powder can be found under (mustard powder, spicy)
- Rub the cleaned and dried meat with the seasoning mixture.
- Melt the bacon and margarine in a saucepan. Fry the meat on all sides until crispy.
- Add the parked vegetables. Deglaze with red wine. Gradually add the red wine and reduce it almost completely.
- Now fill the meat with the stock (beef stock, strong).
- Let everything simmer for about 1-2 hours. Occasionally check the cooking status.
- The following steps are related to the preparation of the beef salad . Of course, the roast beef can also be made as a stand-alone dish.
- When the meat is cooked through, put it to one side, drained and cool well.
- Reduce the stock to approx. 250 ml and allow to cool.
