Roast beef with herb crust and Parmesan

Ingredients for 5 servings:

  • 1 kg roast beef, trimmed and flattened
  • 1 bunch of mixed herbs (e.g. thyme, rosemary, parsley, tarragon, chervil)
  • 140 g butter
  • 100 g breadcrumbs
  • 2 tbsp extra virgin olive oil
  • 60 g Parmesan, finely sliced

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Preheat the oven to 190°C. For the crust, wash, dry, and finely chop the herbs. Cream the butter and mix with the herbs. Add the breadcrumbs and mix, then season with salt and pepper. Pat the meat dry and season with salt and pepper on all sides. Sear the meat in 1 tablespoon of olive oil in an ovenproof pan until crispy, then brush with the herb paste and place the pan in the oven for 25 minutes. Finely shave the Parmesan cheese using a vegetable peeler or a knife. Remove the meat from the oven, wrap it in aluminum foil, and let it rest for about 10 minutes. Then sprinkle the Parmesan cheese over it. Carve the roast beef and arrange it on a large platter. Drizzle with a little olive oil and balsamic vinegar and serve.
