Ingredients for 3 servings:
- 600 g roast beef
- olive oil
- 1 bunch parsley, flat, finely chopped
- 150 g Parmesan, freshly grated
- 100 g breadcrumbs
- 2 garlic cloves
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Make a paste from crushed garlic, breadcrumbs, Parmesan cheese, parsley, olive oil, salt, and pepper. Season the roast beef with salt and pepper and sear it on top and underside in a little oil. Remove the meat from the pan and brush the top with the herb paste. Transfer to an ovenproof dish and finish cooking at 180°C for about 30 minutes, browning the herb topping as desired. Let the meat rest for about 10 minutes, then slice and serve.
